Preparation of iron-loaded water-in-oil-in-water (W<sub>1</sub>/O/W<sub>2</sub>) double emulsions: optimization using response surface methodology

Iron deficiency anemia is a major public health problem caused by low iron intake or bioavailability. To overcome the of anemia, fortification variety food products being tested worldwide. Ferric sodium EDTA desirable source for due to its high bioavailability and ability prevent binding phytates during absorption. This study investigated application double emulsions encapsulation controlled delivery ferric stabilized lipophilic Span®80 hydrophilic complex alginate caseinate emulsifiers. The influence factors such as ratio internal water oil phase, concentrations water-in-oil emulsion external on (din) droplet sizes (dout) was studied response surface methodology. feasible range selection achieving target values din dout proposed optimizer confirmed results experiments. indicate that systems may be useful products.
